But I’ll be honest: Even though I love to bake, I don’t love making coffee cake from scratch. That’s why I decided to give Stellar Eats’ Coffee Cake Baking Mix a try — and it did not disappoint. Please meet the newest afternoon (and also morning) sweet in my rotation.
Stellar Eats’ Coffee Cake Baking Mix Comes Together So Easily and Quickly
The Coffee Cake Baking Mix is made with almond flour, date sugar, tapioca flour, coconut flour, baking soda, cinnamon, and sea salt. Of course, this is before you add the wet ingredients, which are milk (I used unsweetened almond milk, as the instructions suggested, but the brand says any milk works), melted butter as well as softened butter for the streusel topping (I used Kerrygold, but the instructions say vegan butter can be used instead), and two eggs (although Stellar Eats says an egg replacement would be fine, too).
This $15 baking mix is easy to use and comes together quickly. I started by separating some of the mix out and combining it with the softened butter to make the streusel. Then in a separate bowl, I mixed the wet ingredients together and added in the remaining dry mix after. Once the batter was ready, I spread it into an 8-inch pan sprayed with cooking spray, topped it with the streusel, and popped it into a 350°F oven for 20 minutes (the instructions say it may take up to 25 minutes; I started checking it at 15 minutes to be safe). After that, all that was left was to let it cool before slicing it up and digging in.
My Honest Review of Stellar Eats’ Coffee Cake Baking Mix
I immediately adored the texture of this cake. It’s so soft and has a little bit of a cornmeal-like texture, thanks to the almond flour. The nutty almond flavor does come through, but it’s not overwhelming. I totally get the warm notes of cinnamon that are essential to coffee cake.
Between its comforting flavor, its beautiful texture that keeps me coming back for more, and how easy it is to make, this baking mix is one I can absolutely see myself using again. It’s a delicious grain-free spin on a classic cozy dessert that I’ll happily eat for the rest of the week until I’ve cleared the pan — and you heard me before: I usually switch up my afternoon sweet treat on the daily.
